QUICK PULLED CHICKEN SALAD

Here's a flavor combination not often found in a traditional salad. The parmesan cheese adds character, and also thickens up the sauce.

INGREDIENTS

  • 10-oz. can chicken, or equivalent in fresh-cooked chicken, shredded
  • ¼-½ cup grated parmesan cheese
  • 3-4 tbs. sweet India relish
  • your favorite barbeque sauce

PREPARATION

Drain and shred the chicken, then combine all ingredients with enough barbeque sauce to suit your preference for creaminess—it may take more than you think owing to the parmesan cheese.
